You can likely prevent this by combining the example regarding
`abbrev-expand-functions' in the Elisp manual with `texmathp'. Other
than that, the Emacs manual suggests to use `C-q' before inserting a
whitespace or punctuation character in order to prevent expansion from
happening on a case by case basis.
