A very easy to use interface chip for USB is the FT232AM or the FT245AM. 
You can find the datasheets at www.ftdichip.com. Best thing about 
them is that you don't need to write a USB driver for them because 
FTDI has a vitual COM port drivers for Windows and Linux (and IIRC Mac).
