The documentation says this about it in the FAQ:

    B.6.1 Does preview-latex work with  PDFLaTeX?

    Yes, but the foreground color appears fixed to black.  Competent
    volunteers to fix this welcome.  PDFLaTeX works fine with AUCTeX
    version 11.50 or later.  For earlier versions, you need to have
    LATEX-COMMAND-STYLE configured manually to call PDFLaTeX.


This needs debugging in the GhostScript/PDF component of
preview-latex.  I'd be glad if somebody tried actually figuring out
what is going wrong here, and how to fix this.  It obviously makes
preview-latex unusable for people using PDFLaTeX and white-on-black
display (they get their previews black-on-black).
