gnuchess does not honor --version and --help

Hi,

The --help and --version flags are expected of all GNU programs
nowadays.  It's quite inconvenient that none of them work, and that
either of them gets just silently ignored by the program.

Especially, a reliable means of finding out the inxtalled gnuchess
version is needed.  Gcompris currently needs to ensure that version 5
or later is installed, but does not have a clean way to do that.
