I only use ispell for German, so it's inconvenient to use 'M-x ispell-change-dictionary <RET> DICT <RET>' every time.

The manual (info "(emacs)Spelling") doesn't explain how to set default ispell dictionary ('ispell-dictionary'?) for all buffers / for every Emacs session.
