Did you try set-process-coding-system?

No, but is't it coding-system-for-(read|write) that specifies (synchronous) subprocess input|output coding system? And how do i suppose to do that (set-process-coding-system) a priori (when no process exist yet) for a single grep command which executes and returns (process terminates)?
