Enriched mode is a minor mode, not a major mode. I guess the idea is that you can use it with whatever major mode you prefer (though I guess it would always be text mode in practice). I think just using .txt for the example file would be better than making up a new extension. But it seems to me that it should work better than it does now even if you use a .doc extension.
