  > Why?  Why are we quoting "unix" and "dos"?  Why not quote "UNIX"

We write them in quotes in that passage because we are saying they are
the names of certain things.

Compare:

  Humans' pets are mostly of the effusively friendly kind (the "dog")
  or the aloof kind (the "cat").
