FYI,

There are now tools to set up a custom sync[1] and custom
authentication[2] server, which is much more than I hoped for. I
managed to set up the sync server itself, and have not tried yet to
set up authentication too.

It is more of a mess (about:config involved) than it was for the old
system, but that was to be expected. If IceCat wanted to imporve
something on that front, it could provide a better UX for that.
