Just one question, but more than one answer:

- yes, you should leave the copyright notice of the English version as-is
  and add your "Traduzione italiana di" notice below.
- it would be best if you'd translate the TexInfo version of the manual
- it would be even better if it were the latest version of it, which you can
  always find at
