Would you please show me what those automatically generated change log
files for Coreutils look like for the past 3 years?

You can retrieve them from this URL:

https://ftp.gnu.org/gnu/coreutils/coreutils-8.29.tar.xz

For convenience I attach the last three years' worth, as a gzipped text file.

Many people seem very eager to get rid of ChangeLog files.

There's a good reason for that: there are now better, automated ways of maintaining much of the information associated with them. We'd collectively save a nontrivial amount of work by adopting these new methods, and our labor is in short supply (at least, mine is :-).
