#431: Use standard ARCH settings at build time

The ARCH settings x86-64 and x86 aren't standard; they should be changed
to x86_64 and i386 (and should also accept i486, i586, and i686). I am
constantly typing the wrong value when building on 64-bit systems where I
need to override the default architecture setting. It's silly to have two
different conventions, GNU's and Chicken's. (Someone should look at the
other values as well.)
