Until here we create a db and LDAP is already working

I have got this too, but not all the time
It seems to depend on the box, It happens more on my laptop
Usually a ldap restart correct this

I think you should give a private network address
Because this can cause problems
I'm not sure that DNS config nor Postgres will apreciate localhost
address

You can learn more in /usr/share/doc/openldap-guide from openldap-guide
package
