Jon,

Did you try typing "change usrp ip address" into a google search?  The first hit is http://files.ettus.com/manual/page_usrp2.html, which does have the information you are looking for.

Since the USRP isn't specifically GNURadio, it's generic SDR hardware, GNURadio does not have this information; the place you needed to look was at Ettus Research for the documentation on the USRP.
