No thanks. plists can do that just as well, and plists are, IMHO, better
in most ways. defaults already does what you say. It's a command line
tool, but an app could easily do the same thing.
In fact, a generic plist editor would be enough. I believe someone
started working on one, but I don't know how much progress was made.
