Hi,
I just found the wikibooks project
(http://en.wikibooks.org/wiki/Main_Page)
and it contains a Objective-C and a Cocoa/OpenStep project:

http://en.wikibooks.org/wiki/Programming:Cocoa
I think it is a good place to write a GNUstep document or on
wiki.gnustep.org instead.
The only drawback is that it may not be easy to convert the document to
other format.
Since there are several GNUstep documents scattering around the internet,
it would be better to put everything together in a place
and it can be updated easily.
Just a suggestion.
