Thanks for the report.  However, translation bugs are not fixed in
coreutils.git, but by the respective translation teams; as such, I'm
marking this report as "not a bug" in the main coreutils.git bug
database, to avoid clutter from things that will be fixed elsewhere.
What will happen is that the French translation team will fix their
translation .po file, and then the next coreutils release tarball will
automatically pick up the translation fix.  Even though this bug is
marked closed in the main coreutils database, you should still feel free
to reply with further comments or questions.

Look again at the output of:
$ LC_ALL=fr_FR.utf-8 tr --help
...

As such, I've gone ahead and added the translation team into the loop.
