The "standard fontset" (fontset-standard) is not defined on Mac OS
(non-X11) builds.  Instead, they have `fontset-mac' that is described
as follows in the "Mac International" node:

  The fontset `fontset-mac' is created automatically when Emacs is run
  on Mac, and used by default.  It displays as many kinds of
  characters as possible using 12-point Monaco as a base font.  If you
  see some character as a hollow box with this fontset, then it's
  almost impossible to display it only by customizing font settings
  (*note Mac Font Specs::).

So they both can display many non-ASCII characters, but they are
different in the sense that `fontset-mac' is used by default but
`fontset-standard' is not.  If this difference can be considered to be
minor, it would be possible to rename `fontset-mac' to
`fontset-standard'.
