This is probably not what you want, but there is a nice little package to make your org-style outlines PRINT in numbered lists, like you want, even though you would work with them still in the org way, with *'s. Have a look at easylist on CTAN. You do have to do a small hack to get it to work with asterisks, either convert them in Emacs before export, or modify the code of the latex package to accept asterisks as the headline marker. (It explains this in a footnote in the documentation).
