So, from a broader perspective, perhaps this org-class stuff is not the right way to go. I am also noticing that the icalendar-export does not seem to be exporting these diary-sexps anyway. Perhaps I can use org-clone-subtree-with-time-shift to do most of what I want.

No, I believe that's a limitation of what you can do with these
diary-sexps.

You can always add the time to the headline: that way it'll appear in
the agenda (but not in the grid, if you use that, and not sorted
correctly - the time is just a label):

*** Teaching 7:00pm-8:30pm
   <%%(org-class 2014 1 6 2014 3 10 1 1)>
