I don't use the bash tools provided by ePiX,  but I know that a latex document 
which is UTF-8 encoded has to use 
  \usepackage[utf8]{inputenc}
in its preamble.  Search for the "usepacke" statements in the ePiX bash 
scripts and add/alter this this line.
