This might be because FluidSynth is not connected to the audio output ports.  You could do this with something like qjackctl or you can run
FluidSynth with the -j switch.  Perhaps that's all that is wrong.

Absolutely right! Thanks Josh. (Please note that this -j switch (and the unrelated -f option) are not included on the man page.)
