For routing channels or scaling velocity, I use QMidiRoute. You may find it helpful in your case. If you are using Ubuntu, it should be in the repository.

sounded like you were controlling FluidSynth with an external MIDI
synthesizer (or perhaps computer keyboard?) and a Java application.  MIDI
equipment typically has a setting for assigning what MIDI channel it
controls.  Likewise applications which send MIDI events usually also have a
MIDI channel parameter for events.
