That must have resulted from some earlier action.

What do those files contain ?  One should contain a pointer
to the file actually containing the data while the other one
is a script file telling gnuplot what to do.

No. You can plot a single value just fine.

Look at those gnuplot* files. What are they ?  Symlinks ? 
Binaries ?  Shell scripts ?  What does each do ?  Where in
the PATH do they show up relative to each other ?

What you want to achieve is that the first "gnuplot"
executable to be found in the PATH can plot data files and
display them in an X11 window on screen.

I would not replace/overwrite existing files. I would
suggest pointing to the one you want to run with a symlink
from somewhere "earlier" in PATH.
