I see that you have already bumped the soname in GIT gnutls_2_12_x.

Splitting upstream sources imho does not make sense, I do not see the
gain but obviously more work for you (duplicate release process,
e.g.) However I will split off libgnutls-openssl in a
separate Debian binary package.
