Could be you are using a too old version of Carbon Emacs! It's not  
the Emacs major version number, but the time the application was  
built. Its makers had a learning curve until Carbon Emacs was able to  
provide UNIX like services ...

OTOH: can you send some file to Emacs via emacsclient? Does 'crontab - 
e' open the (empty?) table in Emacs? How is it when you change EDITOR  
from "/Applications/Emacs Carbon/Emacs.app/Contents/MacOS/bin/ 
emacsclient" to "/Applications/Emacs\ Carbon/Emacs.app/Contents/MacOS/ 
bin/emacsclient"?
