Following the documentation of the variable
`dired-compress-file-suffixes' and, if you only want to uncompress .Z
files, you can try to add this to your .emacs:
(add-to-list 'dired-compress-file-suffixes '("\\.Z\\'" "" "gunzip"))
I hope this works as (not tested it).
