four-points interpolation

Suppose I have a triangular mesh, with values known at the vertices: to
obtain the value inside of a facet I can resort to interpolation, and
linear interpolation on three points is the simplest.
Suppose now I have a rectangular mesh. What kind of interpolation could
I use? Is there a "simplest" one?
