Following your suggestion I found a post at

that does what I want :
skip = 5;
n=10;
fid = fopen('hypsN10.dir/hbhypsNHYPSGRID10.dat');
for i=1:skip, fgets(fid);end
data = fscanf(fid,"%f",Inf);
data = reshape(data,n,length(data)/n)';
