In fact, I've fixed this problem through a workaround : for templates in
latin1, we still uses the previous subs, and for templates in utf8 we will use
your marc2xml sub.

Declaring the problem fixed.

In Koha 3, we will have everything & everytime & everywhere just unicode & we
will have less problems (the problem being just for import from a previous ILS
at start)
