Please don't forget to tell what LilyPond version you use, otherwise you may get an answer that's irrelevant to the version you have. Arno Waschk wrote:

See the section on Dynamics in the manual! It has an example with a < > on a single note. Up to version 2.2.6, you can also use inline LaTeX code, such as c4^"$<>$" /Mats
