It is not clear what you want.

In the key of C minor, Eb is an unaltared note. Would you want to put a natural on the Eb?

#(set-accidental-style 'forget)
might be what you are looking for if you simply want all naturals and accidentals that are not in the key signature to be displayed everytime.

The only reason to put a natual or accidental on an unaltered note within the key signature is if you are notating non-western music that does not use the concept of keys to being with.

If that is the case, it might be worthwhile to persue removing all key signatures including the default key signature of C major. But even then a natural is assumed in the absence of an accidental. A relevant part of the documentation:

LilyPond makes a sharp distinction between musical content and layout. The alteration (flat, natural or sharp) of a note is part of the pitch, and is therefore musical content. Whether an accidental (a flat, natural or sharp sign) is printed in front of the corresponding note is a question of layout. Layout is something that follows rules, so accidentals are printed automatically according to those rules. The pitches in your music are works of art, so they will not be added automatically, and you must enter what you want to hear.>

But again, the absence of an accidental implies a natural, so having naturals in front of all notes by default is impossible.

Another quote:

<Accidentals and key signatures often confuse new users, because unaltered notes get natural signs depending on the key signature.<

This is an interesting, \musicglyph:

<\musicglyph glyph-name (string)
This is converted to a musical symbol, e.g. \musicglyph #"accidentals-0" will select the natural sign from the music font. See The Feta font for a complete listing of the possible glyphs. <

Or you can follow each note with \natural to put a natural before each note.

How to get naturals on all non-altered notes by default?
None of the accidental schemes seems to do that..
Thanks
