Mike,

You've got a misunderstanding of how Lilypond works.  The staff lines
aren't made from a connected bunch of '-' characters; rather, they're
drawn as postscript lines.

Changing the staff lines to letters would require a fundamental change
in the way Lilypond creates staffs.  I doubt it would be easy to make
the change.
