Lilypond is a typesetter in which you have to "program" your music.
Once it is done, you can launch "ly2dvi file.ly" in order to obtain a 
dvi output.

If you want a graphic interface (a GUI), you can try Rosegarden 
(http://www.all-day-breakfast.com/rosegarden/) but I'm not sure if it 
run under OS X...
