Maybe not by LilyPond, but LaTeX and dvips.  Look up the
\rotatebox macro in the graphicx package.  Try eg.

\header {
  [...]
  latexheaders = graphicx
}

then something like

     LyricsVoice . vocalName = #"\\rotatebox[origin=c]{90}{Chor.}"
