Please always tell what LilyPond version you use and on what kind of
system.

As long as you just want a Postscript file to print out, you could
just as well use dvips without these extra flags. This will give you
bitmapped fonts on the file, which is OK, at least if you have
configured your teTeX installation to use the same resolution as your
printer (use texconfig for that). However, if you want to convert the
file to PDF and want it to look well also when you view it on screen,
using acrobat, then you certainly want vector fonts (Type1 fonts) both
for the musical symbols and the text. This is what you should get with
the extra flags to dvips.

How did you install LilyPond, did you compile it yourself or use some
precompiled package? If you compiled it yourself, please read what
INSTALL.txt has to say about lilypond-profile. In the RPMs, this file
is installed in /etc/profile.d/ which means that it automatically is
sourced when you start a new shell.
If you use Debian, there's a packaging bug in lilypond version 2.0.x,
that can cause the problem you describe. See

Are the font errors anything to worry about?  The output looks ok to me.
