The intension is that you should be able to use something like:
Some text followed by some music
\lilypond[fragment]{<c' e' g'>}
followed by more text.
However, I have just reported a couple of bugs related to this use
of lilypond-book. The main problem is that the music example won't
allocate any horizontal space, so it's overwritten by the text
following it. Hopefully this will be solved soon.
In the mean time, you can use the stable version 2.2.6, where
lilypond-book works better. Still, you have to make sure that
you let the \lilypond{...} command start a new line in the
input file.

"\begin{lilypond}" work well, but always force a new line (and center?)

starting the new line?
btw: when using the "short version" of syntax from the lilypond-book
documentation ("\lilypond[staffsize=11]{<c' e' g'>}"), i get an error
when running latex, saying that "\lilypond" is an undefinded control
sequence.
this is all happening with mac os 10.3.5, using lilypond 2.3.16. i'm
also using TeXShop v1.35 to edit the latex and command line to run
lilypond-book.
