I actually missed the point. Thanks for reminding me.
Anytway, I still don't know how to break the line not at each word.
Writing this :

_\markup { \column < quand la procession sen retournera > }

gives me :

quand
la
procession
sen
retournera

just as in Lily book.

How can I control the point where I want a breakline ?
