I don't use LilyPond from fink, but from CVS. I source the following
file before calling lilypond (adapted from here_lily, some bits may be
useless):

(obviously for fink, this needs some fixing)

And I get serif font (Century Schoolbook).

Other users should have better solutions for fink.
