The alignment can be specified for each syllable, but I don't know of any
convenient way of specifying rules such as "the first syllable of a new 
system
should have this or that alignment". In earlier version of the program, 
there
was some kind of cleverness implemented so that the first syllable of each
sentence was left aligned and the final one was right aligned, but it caused
so much trouble that it was removed, as far as I know.

There are properties that can be adjusted to get shorter stems or 
narrower spacing
between lyric lines or whatever. However, the main focus in LilyPond is on
producing a beautiful default layout.
