The docs for utf-8? Are there documents that specify how to enter a
specific symbol in a text file if I have neither a built-in software
character map nor the unicode number for the symbol?

Well, no. But I know that OSX and windows have built-in software character map, and I'm certain that many exist for linux and windows.

By "docs for utf-8", I just meant the portion of the lilypond docs that discuss utf-8 -- I thought that they mentioned a few cross-platform editors which supported utf8.
