Have you considered separate scores? i.e.

\score
{
    \pianoIntro
}

\score
{
    \allTheHymnStuff
}

\score
{
    \pianoFinale
}

There are other ways, of course (search for "French score" in the  
docs), but this might be the easiest!  =)
