hehe, that has nothing to do with polyphony.

If you look at the error message:

temp2.ly:6:20: Fehler: syntax error, unexpected DIGIT, expecting > or 
DRUM_PITCH or MUSIC_FUNCTION or NOTENAME_PITCH
    { \voiceOne < a'
                    4 fis > <gis e> fis2 e4}

it says that it does not expect the "4" to be there. And indeed, that's your 
problem: In chords the duration is written AFTER the whole chord. In 
particular, you should instead write
    <a' fis>4

Then everything works...
