"lilypond" outputs its messages to the standard error stream.
So, if you use "bash" as a command interpreter, redirect stderr to a file:
$ lilypond test1.ly 2> err.txt
$ cat err.txt
GNU LilyPond 2.10.33
Processing `test1.ly'
Parsing...
Interpreting music... [2]
Preprocessing graphical objects...
Layout output to `test1.ps'...
Converting to `test1.pdf'...
