The easiest way to get familiar with LilyPond is to use it...
We have a great documentation for users; if you haven't yet written
any music using LilyPond, you should probably start by reading our
Learning Manual on
http://lilypond.org/doc/v2.11/Documentation/
(particularly the "Tutorial" part in it)

All LilyPond objects, properties, plugins etc. are documented in the
Internals Reference (follow the above link). If you're already
familiar with LilyPond and with programming, you can also download the
source code of the program.
However, if you just want to write music, you do not have to be a
programmer; the LilyPond language is very simple to learn.
