\tag isn't so difficult you put in a \tag #'trombone {\once \override  
#'whatever-your-override-is} and then when you make parts/score, you  
add an extra \keepWithTag #'trombone, or \removeWithTag #'trombone. It  
sounds more difficult than it really is.
