The term "predefined fret diagrams" just means that the fret diagram is
defined before it is used.

If you want to use the existing set of predefined fret diagrams, you can do
so by putting 

\include "predefined-guitar-fretboards.ly"

at the top of your file.

But if you want to have an entirely different set of predefined fret
diagrams, you can do it quite easily by creating your own predefined fret
diagrams, either in your song file or in a separate file that you include.

And if you want to be free to choose either the existing set or your own
custom set, you can have both exist by \including the file and then defining
your own fretboards in a different octave -- see the section of Notation
Reference 2.4.1 that begins with "Different fret diagrams for the same chord
name can be stored using different octaves of pitches."

Also, if you are using only the exact pitches that are in the chord (i.e. a
major chord will have only three pitches, etc.), then you can use the
Automatic fret diagrams described in Notation Reference 2.4.1.
