This is exactly how I've done it in the past.  I'm lazy so I usually write those types of pieces in 6/8 or 12/8. :-)  Put a friends jazz waltz into a leadsheet once and wanted a midi sample, so I had to have a separate midi version where I put all the parts into triplets.  Tedious, but efective for the midi demo.
