To get the data into the keyboard, it needs to be a "keyboard  
controller", which nowadays normally means having a USB connection  
supporting the MIDI-standard. But it is perfectly possible to use  
other devices to produce sounds directly, see for example <http://chuck.cs.princeton.edu/ 
>, which also support MIDI-devices.

Then LilyPond is a typesetting program. I'm not sure it supports USB  
MIDI-devices (yet), it is possible with some other typesetting  
programs. But if you could, the result would be sheet music. It can  
produce a MIDI-output, but it is a bit roundabout.

But if you want to play and record, making loops etc., in a more  
direct fashion, then you need what traditionally is called a  
sequencer. There are play-along programs like
