 I want to print generate the texts and symbols above each staff, and not only above the entire system...

 

By default, the \mark command is printed in the upper Staff of the system.

If you want to print \mark in others staves you'll need to add the "Mark_engraver" to this Staff :

\new Staff \with { \consists "Mark_engraver" } .

... or to all staves: :

 \layout {\context { \Staff  \consists "Mark_engraver" }}
